Equipment

  • Food processor
  • Parchment paper
  • Microwave-safe bowl
  • Fork or dipping tool
  • Airtight container (for storage)

Ingredients

  • 1 cup Medjool dates (or Any) pitted
  • 1/2 cup raw almonds
  • 2 tablespoons unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • A pinch of sea salt
  • 1/2 cup dark chocolate chips 70% or higher
  • 1 teaspoon coconut oil
  • Optional toppings: Crushed almonds shredded coconut, or cocoa powder

Instructions

  • Prepare the Date and Almond Mixture:
  • If your dates are not soft, soak them in warm water for 10 minutes, then drain and pat dry.
  • In a food processor, combine dates, almonds, cocoa powder, vanilla extract, and sea salt. Pulse until the mixture becomes sticky and forms a dough-like consistency.
  • Shape the Truffles:
  • Scoop out portions of the mixture using a tablespoon and roll them into small, bite-sized balls.
  • Place the rolled truffles on a parchment-lined tray and refrigerate for 15-20 minutes to firm up.
  • Coat with Chocolate:
  • In a microwave-safe bowl, combine dark chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until smooth and melted.
  • Dip each truffle into the melted chocolate using a fork or dipping tool, ensuring it’s fully coated. Let the excess chocolate drip off before placing it back on the parchment paper.
  • Add optional toppings like crushed almonds or shredded coconut before the chocolate sets.
  • Set and Serve:
  • Chill the truffles in the refrigerator for 10-15 minutes to allow the chocolate to harden.
  • Once set, transfer to an airtight container. Store in the fridge for up to a week or freeze for longer shelf life.

Notes

Soften Dates: If your dates are dry, soaking them ensures a smoother texture.
Customize Flavors: Add a dash of cinnamon, espresso powder, or orange zest to the date mixture for a unique twist.
Double-Coating: For a thicker chocolate layer, dip the truffles twice, allowing the first coat to set before applying the second.
Storage: Keep truffles refrigerated to maintain their shape and freshness.
