- 1 cup Medjool dates (or Any) pitted
- 1/2 cup raw almonds
- 2 tablespoons unsweetened cocoa powder
- 1 teaspoon vanilla extract
- A pinch of sea salt
- 1/2 cup dark chocolate chips 70% or higher
- 1 teaspoon coconut oil
- Optional toppings: Crushed almonds shredded coconut, or cocoa powder
Prepare the Date and Almond Mixture:
If your dates are not soft, soak them in warm water for 10 minutes, then drain and pat dry.
In a food processor, combine dates, almonds, cocoa powder, vanilla extract, and sea salt. Pulse until the mixture becomes sticky and forms a dough-like consistency.
Shape the Truffles:
Scoop out portions of the mixture using a tablespoon and roll them into small, bite-sized balls.
Place the rolled truffles on a parchment-lined tray and refrigerate for 15-20 minutes to firm up.
Coat with Chocolate:
In a microwave-safe bowl, combine dark chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until smooth and melted.
Dip each truffle into the melted chocolate using a fork or dipping tool, ensuring it’s fully coated. Let the excess chocolate drip off before placing it back on the parchment paper.
Add optional toppings like crushed almonds or shredded coconut before the chocolate sets.
Set and Serve:
Chill the truffles in the refrigerator for 10-15 minutes to allow the chocolate to harden.
Once set, transfer to an airtight container. Store in the fridge for up to a week or freeze for longer shelf life.
Soften Dates: If your dates are dry, soaking them ensures a smoother texture.
Customize Flavors: Add a dash of cinnamon, espresso powder, or orange zest to the date mixture for a unique twist.
Double-Coating: For a thicker chocolate layer, dip the truffles twice, allowing the first coat to set before applying the second.
Storage: Keep truffles refrigerated to maintain their shape and freshness.
