- 1 teaspoon baking soda
- 2 teaspoons ground ginger
- 1 teaspoon ground cinnamon

- ¾ cup unsalted butter softened
- ¾ cup packed brown sugar
- 1 large egg
- ½ cup unsulfured molasses
- 1 teaspoon vanilla extract
- For the Royal Icing:
- 1 egg white or 1 tablespoon meringue powder
- 1 ½ cups powdered sugar sifted
- 1 teaspoon lemon juice optional
- 1-2 teaspoons water to adjust consistency
Make the Gingerbread Dough:
In a large bowl, whisk together the flour, baking soda, ginger, cinnamon, cloves, and salt. In a separate bowl, beat the softened butter and brown sugar with an electric mixer until light and fluffy. Add the egg, molasses, and vanilla extract, mixing well. Gradually add the dry ingredients and mix until a dough forms. Chill the Dough:
Divide the dough into two halves and wrap each in plastic wrap. Chill in the refrigerator for at least 30 minutes or until firm enough to roll out.
Preheat the Oven:
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper. Roll Out the Dough:

Let the Icing Set:
