Ingredients
  

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter softened
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups mashed overripe bananas
  • Optional: 1 cup chopped walnuts or chocolate chips

Instructions
 

  • Preheat oven to 350°F (175°C). Grease and flour a loaf pan.
  • In a medium bowl, whisk together flour, baking soda, and salt.
  • In a large bowl, cream together sugar and butter until light and fluffy. Beat in eggs one at a time, then stir in vanilla.
  • Gradually add dry ingredients to wet ingredients, mixing until just combined.
  • Stir in mashed bananas and optional mix-ins (nuts or chocolate chips).
  • Pour batter into prepared loaf pan.
  • Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  • Let cool in pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

For a sweeter bread, use brown sugar instead of granulated sugar.
Overripe bananas are key for a moist bread.
Don't overmix the batter; it will result in a tough bread.
You can add other mix-ins like raisins, cranberries, or coconut flakes.
For a gluten-free version, substitute all-purpose flour with a gluten-free flour blend.
