Ingredients
  

  • 1 cup 2 sticks unsalted butter, melted
  • 1 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 1 cup chocolate chips

Instructions
 

  • In a large bowl, whisk together the melted butter, brown sugar, granulated sugar, eggs, and vanilla extract until well combined.
  • In a separate bowl, combine the oats, flour, cocoa powder, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Stir in the chocolate chips.
  • Line a 9x13 inch baking pan with parchment paper.
  • Pour the batter into the prepared pan and spread evenly.
  • Refrigerate for at least 2 hours, or overnight, before cutting into bars.

Notes

  • For a nuttier flavor, add 1/2 cup chopped nuts to the batter.
  • Store leftover bars in an airtight container in the refrigerator.
  • Substitutions: You can use almond butter or sunflower seed butter instead of peanut butter for a different flavor.
  • Storage: Store the bars in an airtight container in the refrigerator for up to a week. They can also be frozen for up to 3 months.
